I love biscotti! I made chocolate ones a while back and they were delicious & surprisingly easy to make.
This time I really fancied making them with that fab combination of maple syrup & pecan nuts.
They are great to give as gifts as they look pretty & keep well too.
Pecan & Maple Syrup Biscotti
400g plain flour
1 tsp baking powder
160G soft brown sugar
80g butter/spread softened
80g pecans chopped
80g maple syrup
2 eggs
icing sugar for dusting
Makes about 24
Preheat 180 C (fan 160 C)
In a bowl, sieve the flour & baking powder add the salt and stir briefly.
Beat butter & sugar until fluffy. Add the eggs & maple syrup and beat until combined.
Tip in half the flour and stir. Then add the rest of the flour and pecans, you should have a sticky dough. On a lightly floured surface split the dough into 2 equal bits. Roll each into a log about 12 inches long and place on the baking sheet. Flatten slightly. Sprinkle with icing sugar.
Bake for about 30 minutes until firm.
Cool for about 5 minutes then place on a chopping board and cut into 3/4” slices on the diagonal. Place these cut side down on the baking sheet and bake again until crisp about 10 minutes. Cool. They keep really well in a tin & are delicious with coffee!
